Restaurant of the Week: Dust Cutter

The Dust Cutter restaurant, located at the Renaissance Phoenix Downtown Hotel, is a modern take on cowboy culture, slang and life in The Southwest, serving up bold cocktails in a modern urban saloon feel.

The attention to detail in the decor is evident, with large over-scaled spurs hanging from the railroad beams above, suspended on a frayed rope and an eyebolt detail. There is also a large sepia-toned mural of a cowboy hat sitting on a metal rail that was coincidentally taken by a local East Valley photographer, serving as an example of their partnership with local culture and craftmanship.

Cocktails are an important part of Dust Cutter, with the cocktail menu being driven by Lead Mixologist Tony Escalante. Signature Dust Cutter batched cocktails include Beet Around The Bush and the El Pipino. Arizona craft beers and artisanal regional wines are featured on tap.

The Executive Chef Josh Murray created a menu that was equally memorable and representative of the Valley of Sun, purposely avoiding being labeled Southwest or Tex-Mex.

You can’t go wrong with anything on the appetizer list. We highly recommend Mary’s Chicken Taquitos and the Hatch Chile Hayden Mills Corn Bread Skillet with cilantro agave butter. The corn bread is even better if you dip it into the guajillo pepper sauce from the taquitos dish. The Roasted Pepper and Garlic Pork Wings are also delicious and you could even make that your entree.

There is a whole section of the menu dedicated to elevated Cheese Crisps, including fig & prosciutto and BBQ chicken flavors. You can also choose from sandwiches and salads, including a Grilled Spicy Chicken Sandwich, Sonoran Burger and a Baby Kale & Honey Crisp Apple Salad.

For entrees, there is a Burrito Bowl, Chicken & Waffles, Shrimp & Grits and our personal favorite, the Toasted Quinoa Bowl with roasted corn, tomatoes, Grand Canyon onions, Fresno chilies, cilantro, black beans.

Happy Hour is offered Monday through Friday, from 3-6 pm, and the restaurant opens at 11am daily.
