First job: My first job is when I was 11 years old and was the bread cutter for all the busboy’s at my dad’s restaurant. I felt so accomplished when I got promoted to dishwasher!

Favorite AZ restaurant: My favorite restaurant is Tarbell’s. Mark is an amazing chef and has created a phenomenal restaurant and menu. Mark is a remarkable person, which makes his restaurant even better. It is also right next-door to the famous Tomaso’s!

Person who has impacted your life the most: My wife and children are who have impacted my life the most. My wife is my rock and the love of my life. My children, well, they make me a better man and chef. My family brings happiness to my heart, and that transpires through my food, to my guests.

Your biggest accomplishment in your eyes: Making the move to Scottsdale, from my beloved home in San Diego was tough for me. But, when I arrived I realized I could create fun brands in the culinary world- and that is exactly what I’m doing. The Hash Kitchen is an out of the ordinary restaurant, so being able to make it successful is amazing.

The biggest obstacle you have overcome: In July 2015, I changed Cuttlefish, a Maggiore Culinary Concept, to The Hash Kitchen. I loved Cuttlefish and what it stood for in the culinary world, but I knew that The Hash Kitchen would thrive more. It was a large obstacle to overcome, and am so glad I took the risk.

Someone who inspires you: My father, Tomaso Maggiore is my idol. His work ethic, love for food, his Sicilian heritage and life overall is unbelievable. What a great way to live your life—that man will live forever!

Favorite quote: “Good food takes time, we have good food, do you have time?” – Tomaso Maggiore

Advice to someone pursuing a career path in what you do: Run! Just kidding… but make sure if you want to be a chef it is coming from your heart. Make sure that you have an incredible passion for it, and urge to better yourself every day. Prepare yourself for the hurdles you will have to overcome and remember to always keep your family first.

What makes someone fabulous: Their word and respect. If someone gives you their word, and honors it, they will be treated with respect. Simple as that, that is what makes someone fabulous in my book!
