Hometown: Wichita Falls, Texas

First job: Scott’s Drive In, an old school drive in dining. The only thing missing was the roller skates. I started as a car hop, slingin’ sodas and shakes, and toasting buns. I remember walking home jingling with pockets full of quarters. Once I started cooking, I never looked back. Many years later, here I am!

Favorite AZ restaurant: It’s too early to tell, as I have only been in the Valley for one month. Right now, I am mainly eating in my own restaurants — Proof & Talavera. I am looking forward to getting out into the scene; it seems to be bustling with great chefs and unique dining offerings!

Person who has impacted your life the most: Two German men helped steer my life in its current direction — my (late) father and the first chef I worked for, Elmar Prambs. My father imparted me with my work ethic and integrity, and Chef Elmar showed me how to apply it to cooking.

Your biggest accomplishment in your eyes: Building La Capitale Brasserie in Four Seasons Amman, Jordan. It is rare that a chef gets an opportunity to build a dream kitchen with a dream restaurant and work directly with the designers and builders with a very large budget! Hand selecting the products to be used — from the food to table service, table top and décor– it was an amazing one-year adventure!

The biggest obstacle you have overcome: No obstacles, only solutions. I prefer to look at the glass always half full!

Someone who inspires you: Henry Rollins. I have an opinion — right or wrong — just listen!

Favorite quote: Maybe not a quote, but my mantra… as suggested by an Algebra teacher from long ago. Use the KIS(S) method. It applies in so many ways — Keep It Simple (Stupid).

Advice to someone pursuing a career path in what you do: Never stop learning. You will never know everything. Stay hungry — hungry for knowledge and (obviously) hungry for food!

What makes someone fabulous: Attitude. With a great attitude and positive energy, it’s easy to be fabulous!
