Who is Jeremy Pacheco?

Jeremy Pacheco, from Tucson, Arizona, is the Executive Chef of LON’s at The Hermosa Inn in Paradise Valley. Jeremy has gone from washing dishes, to being the Executive Chef for several top restaurants in the nation.

What is Jeremy Pacheco’s Story?

Jeremy Pacheco started washing dishes when he was 16 years old. The restaurant business got in his blood, so he went to Scottsdale Culinary Institute when he turned 19 while working at the Phoenician. Over the next seven years at the Phoenician, Jeremy worked his way up from prep cook to Chef de Cuisine of the Terrace Dining Room (El Terrazo now).

From there, Jeremy moved to Vegas to open the Wynn – SW Steakhouse in 2005 as Chef de Cuisine and also opened Encore Las Vegas as Chef de Cuisine of Society Café in 2009, which won one of Esquire’s best new restaurants of 2009.

It was in 2010 that Jeremy became Executive Chef of The Hermosa Inn & LON’s at the Hermosa (for the first time) and was with the property for 3.5 years before returning to Las Vegas as Executive Chef of Society Café at Encore for the last two years before returning to The Hermosa Inn in September.

Jeremy Pacheco hopes to own a restaurant, pub and butcher shop someday.

“Your what hurts?” – this is something I find myself saying to my team constantly. The kitchen isn’t the place to complain; it’s to cook.
