Portland-based Bamboo Sushi, the world’s first certified sustainable sushi restaurant, opened their first Arizona location at Biltmore Fashion Park in Phoenix.
Bamboo Sushi has a modern Japanese aesthetic with a large, open dining room that has both intimate booths and a sushi bar where guests can sit and watch chefs preparing each meal to order. There is patio and bar seating as well as an indoor-outdoor private dining space in addition to a large 40 by 10-foot art installation unique to the location.
Led by Chef de Cuisine Andrew Giddens and Head Sushi Chef Josimar Rojas, Bamboo Sushi’s menu features upscale Japanese dishes with approachable prices. Nearly every item on the menu is gluten-free (dishes WITH gluten are noted on the menu) and there are options for vegetarians and vegans as well.
We recommend ordering a variety of dishes to share with the table. To start your meal, you absolutely must order the Crunchy Fried Cauliflower, made with spicy black bean sauce, toasted cashews, and cilantro. If we could eat a whole bowl of this for our meal, we would – it’s that good.
“From the Sea,” enjoy Tuna Poke, Miso-Cured Black Cod and “House on Fire” Mackerel, to name a few. “From the Land,” the Steamed Bun with chef’s choice of filling is a very popular choice as well as the Snake River Farms Wagyu Burger. “Make it Sumo” with bacon, fried egg, and togarashi-fried shallots.
You really can’t go wrong with any of the Signature Sushi Rolls, but our absolute favorite is the Green Machine with tempura fried green bean and green onion, topped with avocado, and cilantro sweet chili aioli. We recommend adding the House Crab to this roll.
For drinks, you find wines that specialize in organic and biodynamic processes, inspired cocktails with fresh seasonal flavors, and generous sake options including Bamboo Sake, a proprietary variety developed with renowned brewery Kobe Shu-Shin-Kan.
Bambo Sushi in Phoenix will serve lunch and dinner 7 days a week with happy hour 3-6pm Monday – Friday.
