Nov. 7: Poke Class
Say aloha to the jewels of the sea during this Poke Class led by Chef Cariaga. This exciting class will take place on Thursday, Nov. 7, at 2 p.m., as Chef Cariaga dives into the art and history of poke with a hands-on lesson. This unique culinary experience not only teaches participants how to create poke but also delves into its origins as a staple of ancient Hawaiian cuisine. Chef Cariaga will guide guests through selecting the freshest ingredients and mastering the delicate balance of flavors that make poke a cherished Hawaiian dish—using traditional elements like sea salt, ogo (seaweed), and inamona (roasted kukui nuts). Nov. 7 and Nov. 8: Chef’s Table
Experience a true island luau during Andaz Scottsdale Resort & Bungalows’ Chef’s Table, featuring Chef Cariaga and Chef Sammy D. Running on Thursday, Nov. 7, and Friday, Nov. 8, this tropical evening at Weft & Warp Art Bar + Kitchen is inspired by Hawaii’s sugarcane plantation era, where guests will be treated to a five-course, farm-to-table menu. These indulgent items include a delicious array of dishes, beginning with shared plates of Ahi Tuna Poke with taro chips, avocado, sesame, and ogo, followed by innovative courses that take inspiration from Chinese, Japanese, Filipino, Korean, and Portuguese cuisines. Highlights include compressed watermelon with li hing mui and Big Island goat cheese, Kampachi Tataki with ponzu and cilantro, Filipino-style pork belly with tamarind broth, and Kalbi-marinated ribeye served with pickled daikon and kimchee. The experience will end on a sweet note with Portuguese-inspired malasadas drizzled in Haleakala goat dairy caramel.
