Scottsdale is set to welcome a new dining destination in Lincoln Village that promises to redefine Indian cuisine. Opening in early 2025, Indibar is an elevated Indian restaurant that blends authenticity with modernity, offering a unique dining experience that celebrates the culinary traditions of India.
Founded by Masti Hospitality LLC, alongside acclaimed chefs Nigel Lobo and Ajay Negi, Indibar aims to transport guests to the heart of India with every bite and sip. From meticulously crafted dishes to innovative cocktails, the new Scottsdale restaurant will be a tribute to the diverse flavors and techniques that define Indian cuisine.
Indibar’s menu is deeply rooted in Indian traditions while embracing a contemporary twist. The dishes evoke memories, such as the aroma of spices from a family kitchen or the warmth of an open fire, while remaining refined and innovative. At the helm of Indibar’s kitchen are two renowned chefs. Executive Chef Lobo has honed his craft in Michelin-starred kitchens worldwide, including collaborations with Chef Paco Perez and the team from El Bulli at Compartir. With experience in Spain, Germany, Australia, and Denmark, as well as studies under legends like Thomas Buhner and Magnus Nilsson, Chef Lobo brings a sophisticated global perspective to Indibar. Chef Negi, a tandoor master, has led award-winning kitchens in Dubai, the Maldives, and India, including Bombay Brasserie at the Taj and the Armani Hotel in Burj Khalifa. His understanding of traditional Indian cooking methods, such as tandoor baking and “Dum” roasting, ensures that Indibar’s offerings remain true to their roots.
“Our team sets out to change perceptions around Indian cuisine and showcase how Indian culinary techniques are at the forefront of contemporary dining experiences,” says Chef Lobo, in a recent press release. “At Indibar, we not only respect tradition and bring an authentic taste of India to Scottsdale; we also strive to push the boundaries of what Indian food can be – vibrant and expressive, the intersection of classic flavors and modern flair, and a fine blend of dynamic and exciting experiences true to its roots.”
Together, the chefs have created a consciously sourced menu featuring hand-ground spices, house-made chutneys, and freshly baked bread. The use of charcoal tandoor, a rare, skill-intensive cooking method in the region, adds an authentic touch to the dining experience.
Indibar’s dedication to storytelling extends beyond the kitchen to its thoughtfully designed beverage programs. The restaurant’s craft cocktail menu highlights Indian flavors with artisanal spirits, house-infused syrups, and exotic ingredients. Each drink is crafted to enhance the dining experience while narrating the cultural history of India. To further elevate the culinary offerings, Lead Sommelier Shanaya Fastje has curated a wine program that pairs perfectly with the bold, complex flavors of Indian cuisine.
