Restaurant of the Week: Blue Hound Kitchen & Cocktails

Located on the second floor of the Kimpton Hotel Palomar, Blue Hound Kitchen & Cocktails brings its award-winning cocktail program, elevated New American eats and a chef-driven menu to the heart of Downtown Phoenix’s Cityscape.

Blue Hound offers a sophisticated, yet rustic charm in its design, with a heavy focus on wood elements, dark-cold tones and low, intimate lighting. The kitchen can be seen from most seats, where visitors can catch a glimpse of their food being carefully prepared. The restaurant also features a massive rooftop patio, with cozy string lights, earthy elements and bountiful plant life that overlooks Downtown’s cityscape.

Back in the kitchen, you will find the culinary arts veteran, Executive Chef Brian Peterson, who holds 20 years’ worth of experience. Peterson is the newest addition to Blue Hound and has created a menu focused on fresh, seasonal ingredients and undiscovered flavors. The menu features casual light bites, shareables, a curated beef program and sophisticated mains alongside a cocktail lineup that can be paired with each dish.

“The menu is very approachable and made with the freshest, all-natural, quality ingredients that are seasonally sourced from the area’s best local farmers,” says Chef Peterson.

We recommend starting your meal with freshly baked Nobel Bread, with warmed house-cultured butter and a dash of sea salt, or the braised faux chicken wings crafted with whipped carrots, celery heart and Pt. Reyes blue cheese. Some notable main dishes include the chef’s cut of the day, with your choice of meat cut to be paired with butternut spaetzle, braised chard, guanciale, balsamic cipollinis and demi-glace; and the duck breast, which has been braised for 24 hours with herbed barley risotto, vanilla and parsnip puree, cured grapes and pink peppercorn agrodolce. For those who save room for dessert, the peach bourbon mascarpone is to die for, with layers of bourbon-infused peaches and a soft, creamy mascarpone to complement.

Each dish at Blue Hound has an artfully paired cocktail to accompany. The award-winning program focuses on using refreshing, seasonal ingredients and the highest quality liquors and house-made syrups to provide unique sips. The staff is highly knowledgeable on the drink program and can aid you in deciding which libation best suits your dish. The menu is seasonal, with specialty drinks changing alongside the weather. The current drinks on the menu are inspired by the end of summer and beginning of fall, like the Campfire handcrafted with Four Roses bourbon, herbal smoke and becherovka (served neat) or the Sicilian Summer Spritzer, with Maker’s Mark, Averna, cardamaro, lemon and a splash of soda. In addition, the drink menu also includes a wide selection of bourbon flights, bubbles, whites, reds and locally crafted brews.

If you’re looking for adventure, Blue Hound offers a unique “Trust the Team” option, where guests will go on a culinary experience with a surprise five-course menu that includes specialty cocktails and wine pairings to accompany main courses and desserts.
