Aubergine Kitchen, a Utah-based restaurant known for its health-focused, Mediterranean-inspired dishes, has opened in Mesa, adjacent to Dana Park. Serving nutrient-rich bowls, salads, wraps, and smoothies, Aubergine Kitchen caters to health-conscious diners, including those seeking gluten-free and vegan options. The restaurant emphasizes locally sourced, sustainable ingredients, and its menu is crafted to support balanced, clean eating.

With an interior reminiscent of a European café, Aubergine Kitchen’s newly opened Mesa outpost is decorated in whites and beiges with abundant greenery. The fast-casual setup offers both individual and community tables, inviting guests to enjoy a communal dining experience.

Aubergine Kitchen’s guiding principle, “Eat Better, Feel Different,” is reflected in its use of natural sweeteners like fruit, seed-free oils, and baked—not fried—preparations. Popular menu items such as The Mediterranean Bowl and hearty Steak Plate can be customized with a choice of almond wild rice, quinoa, turmeric rice, or cauliflower rice, and a variety of proteins.

Wraps, sandwiches, and salads are also available, alongside fresh smoothies that draw inspiration from celebrity blends popularized by upscale Hollywood cafes. Mix-ins like sea moss, hemp seeds, and flax seeds can even be added to up the nutrition value.

Aubergine Kitchen was founded in 2014 and has since grown to include locations all throughout Utah. The restaurant is open Monday to Saturday, from 7:30 a.m. to 9 p.m. (closed Sunday).
