Fox Restaurant Concepts has introduced Blanco Reserva, a sophisticated evolution of the beloved Blanco Cocina + Cantina brand, at PV, the highly anticipated $2 billion redevelopment of the former Paradise Valley Mall. This marks the seventh location for the Blanco brand, showcasing an elevated interpretation of its signature feel. Blanco Reserva promises a fresh perspective to its Sonora-inspired cuisine with a lineup of enticing new entrees and a reimagined interior.

Blanco Reserva is more than just a new location; it’s an evolution of what Blanco represents. Diners can look forward to indulging in elevated flavors, creative cocktails, and an ambiance that seamlessly blends the vibrant energy of the original brand with a fresh, upscale twist.

When arriving at Blanco Reserva, the entrance is reminiscent of a concrete garden, complete with an arched entrance, string lights, and a window that looks into one of the restaurant’s bars. The interior matches its elevated menu and cocktails with a modern, hacienda-inspired design. Rich red tones, low ceilings, greenery, and textured materials like stone, tile, and leather create an inviting ambiance. A custom chandelier, walnut wood accents, and arches enhance the space’s moody aesthetic. The space also features a covered outdoor seating area with a large fireplace and heaters spread throughout the expansive patio.

Blanco Reserva reflects a sophisticated reinterpretation of the classic Blanco experience, embracing the warm hospitality and communal spirit of Spanish ranchos. The restaurant’s newly reimagined menu includes an array of appetizers and shareable plates. You can’t go wrong with starters like guacamole, warm queso, Mexican street corn, or a cheese crisp. Signature cocktails include the Pushing Daisies Margarita, crafted with Don Julio silver tequila and finished with smoked summer salt, and the Mango Stand, featuring diced mango and a spicy salt rim. The fan-favorite Thunderbird combines Astral Blanco tequila with smashed jalapeno and strawberry and light notes of clementine, garnished with blistered shishito peppers. Guests can enjoy margaritas by the glass or pitcher, in addition to frozen options. Another must-try cocktail is the Oh Cool, a Clarified Drink, featuring coconut-washed mezcal, rum, jugo de guanabana, Spanish vanilla, and brûlée banana for a smooth coconut-forward flavor. The expanded bar experience is a testament to the restaurant’s commitment to delivering bold, dynamic flavors that elevate every aspect of the dining experience.

Blanco Reserva is one of the first restaurants to open as part of PV’s $2 billion redevelopment, joining its sister restaurant Flower Child, which opened in the fall of 2024. The new location aligns with PV’s vision of a vibrant, contemporary community hub.

Blanco Reserva at PV is open from Sunday to Thursday, from 11 a.m. to 9 p.m., and Friday to Saturday, from 11 a.m. to 10 p.m. Happy Hour is available Monday to Friday, from 3 to 6 p.m.
