Catalyst Crafted Ales

Wanting to separate itself from the usual approach of brewing practices, Catalyst Crafted Ales introduces a Southern Californian flavor that is “larger than life” to Tempe. Head brewers Will Walthereson and Alex Baldwin aim to change the game by bringing Californian roots to Arizona with a menu that raises the bar within Western-style brewing.

In the short time since its grand opening in February, Catalyst Crafted Ales has become known for its innovative barrel-aged brews and creative seltzers that are recognizable for their balance. “We want our guests to feel pleasure while drinking their beers, rather than indulging in any kind of harsh or hard-to-drink taste,” says Walthereson. “We also don’t want them to feel like this has to be their first and only stop. Our brew can be enjoyed at any point in a guest’s day–whether we are their first stop or last stop. They don’t have to worry about getting too intoxicated after just a couple of beers due to high complexity.”

In order to make their craft beers unique, the brewers pull ingredients from all over the world. An example of this would be a Catalyst Crafted Ales favorite: Pistachio Prestige, which is noted to carry a flavor profile of hard-to-obtain vanilla beans. In addition to their list of one-of-a-kind ingredients, the head brewers also utilize unparalleled sources and methods to create a distinctive array of beers and seltzers by playing with their creativity.

Many of the beers derived from Catalyst Crafted Ale’s in-house fermentation vessels and oak barrels are the footprints of what makes for a groundbreaking tasting experience. Alongside its crafted ales, this brewhouse partners with S.A.L.T. Sea and Land Tacos, a next-door dining counterpart. They intentionally brew a select handful of beers to complement the tastings of what is on the food menu. Guests can enjoy an elevated pairing experience while taking in the brewhouse-like atmosphere.

In addition to enjoying S.A.L.T. menu items, including the tasty octopus, shrimp, and fish tacos made with blue corn tortillas, the brewery carries a menu of its own–offering both brunch and traditional lunch selections. Guests of the brewery are also encouraged to partake in a common tradition known to many brewhouses: a brewery tour. However, what makes this tour non-traditional is that groups will be able to indulge in an education while also indulging in one-on-one connection with the brew masters themselves. There is also a chance to play board and card games during these visits.

Catalyst Crafted Ales is open Sunday and Monday, from 11 a.m. to 8 p.m., Tuesday through Saturday, from 11 a.m. to 10 p.m., and for daily happy hour.
