COURSE Introduces Sunday Signature Menus

Scottsdale‘s COURSE, led by acclaimed chef and partner Cory Oppold, a recipient of the prestigious Top Chef and Emerging Restaurant of the Year by the Foodist Awards, has launched Sunday Signature Menus. This series of themed culinary experiences will transport guests to diverse global destinations, starting in Italy.

The debut of COURSE’s Sunday Signature Menus is marked with a spotlight on Italy, offering a culinary journey that captures the essence of authentic Italian flavors and traditions. Due to the overwhelming demand for this experience, COURSE is extending the Italy menu for an additional Sunday on Oct. 13, from 11 a.m. to 3 p.m.

Guests will begin their Italian meal with a light breadstick paired with an aerated pesto, providing a herbaceous start to the eight-course meal. The hand-pulled mozzarella, served with figs, prosciutto, mint, tender almonds, and rich balsamic, is a decadent combination that balances both sweet and savory flavors. The tortellini en brodo is a mushroom-filled tortellini topped with chanterelles and lobster mushrooms sitting in a bed of consomme that is poured into the bowl tableside.

The next course is branzino, a tender fish accompanied by artichokes, eggplant miso, capers, olives, and a basil-infused tomato fonduta. Try them all together for the perfect bite. For pasta lovers, the risotto is an elevated twist on the beloved Cacio e Pepe, enhanced with braised black peppercorns and a frothy parmesan finish. The reimaged chicken parmesan is a breast roulade with classic breading, confit tomatoes, and rich marinara sauce. The veal marsala brings together tender veal, flavorful crimini mushrooms, ricotta gnudi, and a smooth marsala sauce.

The exclusive Mexican-inspired menu is available on Oct. 20, Oct. 27, Nov. 3, and Nov. 10 with reservations from 11 a.m. to 3 p.m. Guests can look forward to an eight-course dining experience that brings the bold and diverse flavors of Mexico to the forefront.

The meal begins with a shrimp ceviche featuring succulent shrimp paired with cucumber, avocado, cilantro, and jalapeno and served with crispy chips for a refreshing start. Next is a twist on a street food favorite: Mexican street corn. The calabacitas course celebrates squash in various forms, complemented by Oaxaca cheese, oregano, and masa tempura. The seafood course, snapper a la Veracruzana, showcases confit tomatoes, olives, caperberries, and a traditional Veracruz-style sauce.

The journey continues with a highlight of Mexican street food, al pastor. This course features tender pork, pineapple, and a corn tortilla, finished with traditional garnishes. The pollo en mole brings a modern twist to a classic, with chicken breast roulade, mole poblano, masa tuile, and a side of rice. For the next course, enjoy carne asada, featuring K4 Copper State Reserve ribeye, served with Mexican bulb onions, nopales, and a molcajete salsa that ties the dish together. To round off the meal the desserts are equally enticing. Savor both flan and tamarind.
