etta Scottsdale, a popular dining spot since its 2022 debut at Scottsdale Quarter, has been acquired by Austin-based RDM Hospitality. The restaurant has been temporarily closed since mid-July and will re-open in late September as a re-imagined modern Italian concept.
RDM Hospitality recently opened The Guest House in Downtown Austin, known for its Alice in Wonderland-inspired cocktails, and plans to bring similar immersive cocktails to etta Scottsdale. The revamped menu will offer a modern twist on American and Italian classics. Executive Chef Todd Mark Miller, the founding executive chef of STK and creator of the $100 Philly cheesesteak at Barclay Prime in Philadelphia, will lead the kitchen. etta’s signature wood-fired hearth and JOSPER oven will remain central to the culinary experience.
“The revamped menu will be a blend of homestyle, authentic Italian dishes like your grandmother would have made with a modern twist, along with more high-end entrees including a selection of steaks finished in the JOSPER,” says Chef Miller, in a press release. “Everything we offer will be made fresh in-house using the finest ingredients, sourced locally whenever possible. We’re also planning some fun, interactive dishes finished table-side that are sure to wow guests.”
The restaurant is being redesigned by local architect Aline Architecture Concepts and interior designer Social Design Studio, known for its work on many Valley projects. The refreshed restaurant will feature a main bar with more TVs, optimal for sports viewing, while the dining room offers a more immersive experience. This includes an advanced sound system by INFINITE Audio Systems from Miami. Additional changes will include a moodier vibe, updated lighting, lush greenery, and a private dining room.
“We think there’s a real void in the North Scottsdale market for a more immersive and vibrant dining experience,” says George Martin, chief operating officer of RDM Hospitality, in a recent press release. “We’re planning a transformative overhaul focused on four main areas – leadership changes, design and aesthetic updates, revamping the menu and strategic partnerships. We can’t wait for guests to see how we are reinventing an already great concept to bring something new and different to the North Scottsdale crowd.”
etta Scottsdale will be open daily for lunch and dinner, with brunch offered on weekends upon its reopening in September. The reopening aims to provide North Scottsdale residents with a fun late-night dining destination featuring a DJ seven nights a week.
