Faro & Brag, a new restaurant at The Westin Kierland Resort & Spa, elevates hotel dining to a whole new level. The newly opened restaurant promises an unparalleled dining experience with a fresh new menu crafted by Executive Chef Chris Masco with an emphasis on using fresh, seasonal and local ingredients.

As you enter Faro & Brag, the restaurant is adorned with dried wood details, linen textures and light blue decor evoking the feeling of a refined coastal ambiance. Faro & Brag offers both indoor and outdoor seating with sweeping views of the hotel’s picturesque golf course.

Start your meal with an array of soups, starters and salads. Faro & Brag offers a hearty three-bean and feta soup with hints of lemon and garnished with crunchy croutons for added texture in each bite. For a refreshing option, opt for the heirloom tomato salad. This abstract salad comes with an array of fresh, colorful tomatoes, creamy burrata, a crispy basil leaf and microgreens, all laying on a refreshing lemon vinaigrette. What truly sets this salad apart is the balsamic pearls that look similar to caviar and pop in your mouth, giving a burst of flavor with each bite.

If you are looking for a more substantial appetizer, the mussels are a must-try. Faro & Brag serves meaty Prince Edward Island mussels, steamed to perfection, sitting in a creamy, white wine sauce with heirloom tomatoes. Complementing the dish is a side of grilled bread, perfect for soaking up every last drop of the sauce.

Faro & Brag offers eight main entrees to choose from, including one signature called the Faro & Brag Tablas, designed to serve two people. The meal arrives on a hot, sizzling stone that is sure to capture the attention of the entire restaurant. Searing on the stone, you will find impeccably tender wagyu beef that melts in your mouth, two perfectly cooked diver scallops and succulent lamb alongside grilled vegetables and two dipping sauces. The aroma fills the dining room, setting the stage for an unforgettable experience.

Another standout dish is the tamarind pork shank. The pork is braised for over 12 hours until it effortlessly falls off the bone, offering a balance of sweet and sticky flavor reminiscent of barbecue. The pork is served over a bed of grits with broccolini on the side. For those craving a taste of Spain, the paella is an excellent choice, available in both half- and full-size portions. This traditional Spanish rice dish is filled with an assortment of seafood, including diver scallops, mussels and prawns, topped with a lobster tail. The paella sits in a saffron broth, delivering a hint of smokiness that adds depth to each bite.

No dining experience is truly complete without indulging in dessert. Treat yourself to the limoncello tiramisu, elegantly presented on a half-circle dish reminiscent of a terrarium. The beautiful yellow lemon cake comes topped with meringue, a white chocolate flower and white chocolate-covered pop rocks that add a unique sensation to each bite. For those with dietary restrictions, the decadent dark chocolate torte is the perfect solution, being both vegan and gluten-free. True to its name, this decadent cake is layered with rich chocolate cake and velvety chocolate ganache. The cake is then topped with vegan vanilla ice cream and served with strawberries and blueberries.

Faro & Brag offers a variety of unique signature cocktails. Among the favorites is the Train to Uno, featuring tequila, elderflower, lemon and vanilla for a light, refreshing taste. Equally beloved is the Call the Turn, a vodka-based strawberry lemonade enhanced with fresh strawberry puree and garnished with a beautifully crafted strawberry-shaped rose.

A unique addition to the cocktail menu is bourbon prials, also known as bourbon flights. Drawing inspiration from the card game Brag, where a trio of matching cards is called a “prial,” Faro & Brag presents four enticing prials, each offering a selection of three unique bourbons to sample.

Faro & Brag is open daily for breakfast, from 6:30 to 11 a.m.; lunch, from 11 a.m. to 2 p.m.; and dinner, from 5 to 10 p.m.
