Forty1 Now Open in Sedona

Sedona’s newest dining destination, Forty1 at Ambiente, a Landscape Hotel, features an all-female-led culinary team and is now showcasing its premiere menu and impressive dining room.

Located at Ambiente, a Landscape Hotel in Sedona, Forty1 serves as the heart of the boutique hotel’s three-acre property. Simple and earthy by design, the refined restaurant offers an ever-changing menu of delectable dishes geared toward guests with an adventurous palate in a modern matte black atmosphere with breezy floor-to-ceiling windows, an outdoor pool terrace and glossy glass panels along the back interior wall that reflect the red rock formations that Sedona is known for. Based on locally grown and seasonal ingredients obtained from the surrounding region and beyond, the menu will stun with distinct, Southwestern flavors and cultivate a fully unique presence within Sedona’s world-renowned restaurant scene, generating a refreshing new era for the rising foodie destination.


Leading the team is Executive Chef Lindsey Dale, who shares an appreciation for the spirit of the Verde Valley and is dedicated to representing its remarkable bounty through her food. For the past year, Chef Lindsey has worked closely with Blue Bird Farms, an organic, intentionality-driven farm based in neighboring Rimrock and owned by two Northern Arizona natives, to individually produce many of the items included in Forty1’s menu. From natural produce like zucchini, broccoli, chili peppers and several varieties of tomatoes to corn, Brussels sprouts, goat cheese and more, Chef Dale sources hyper-locally whenever possible to ensure the freshest flavors possible.

Not does Forty1 offer delicious dining experiences, but it also does its part when it comes to the sustainability of its services. Chef Dale also recruited Blue Bird to supply Ambiente with composting services, citing a shared ethos between the farm’s employees and her own. This ensures that all biodegradable materials, whether restaurant waste or coffee grounds, are recycled directly back into their source soil, resulting in a totally self-sustaining farm-to-fork life cycle.

“It was such a gift to have the proper lead time to develop the culinary program for Ambiente, not only to ensure that the vision for Forty1 was perfectly honed to meet the exceptional standards of the property, but also so that partnerships could be authentically forged with vendors like Blue Bird Farms that we know are equally invested in the culture of sustainability and pride for Arizona that is so deeply rooted in our core values,” says Chef Lindsey Dale, in press release. “My ultimate goal is to provide guests with an unforgettable meal that earns its place as a paramount element of their Sedona experience, and I am very proud of what we’ve created here.”


Standouts from the debut menu’s broad selection of dishes include: the Winters Frost Salad with Blue Bird Farm goat cheese, confit baby beets, fennel, hazelnut and balsamic; the seared scallops with Aji pepper, beets, parsnip, baby carrots, quinoa and herb oil; as well as a stunning duck duo with seared breast and confit leg, parsnip puree, baby turnips, Blue Bird Farm Swiss chard, purple yam gnocchi, Pine Creek lavender blackberry gastrique and Earl Grey foam.

Together with the delicious culinary pairings, guests will be wowed by an extremely extensive cocktail menu created by lead bartender and mixologist Breann Anzar in collaboration with Chef Dale. The distinctive drink menu will change with the seasons, mirroring the food, and will feature specialties like The Double B with brown butter-washed reposado, cinnamon, pumpkin and café bitters; Spiked Red Eye with espresso, all-spice, vodka and secret simple syrup; and The Haboob with rye, orgeat, lemon, house apple cider and mesquite. Forty1’s wine list will include some incredible finds, ranging from Opus One and O’Shaughnessy to grower champagnes like Francis Orban Extra Brut.

Open every morning from 7 to 10:30 a.m., Ambiente hotel guests are invited to Forty1 for a complimentary a la carte breakfast brimming with a variety of delectable morning delicacies. Then, in the evening from 5 to 9 p.m., Forty1 will once again open its doors to hotel guests and beyond for its delicious dinner service.
