Located in North Phoenix, Humble Oysters & Bubbles sits adjacent to Humble Bistro’s High Street location. The interior exudes an East Coast charm with white shiplap walls, classic subway tiles, and black-and-white beach-inspired photography lining the walls. Guests can either dine at the concrete bar top while watching their meal being prepared, adding an interactive element to the experience, or sit in a booth that lines the perimeter of the restaurant for a more intimate vibe. By day, Humble Oysters & Bubbles is filled with natural light, and by night, it transforms into a candle-lit atmosphere, perfect for a romantic dinner. Each item on the menu is made from scratch, including the selection of bread served on the side of many dishes. The menu showcases an impressive array of oysters, mussels, clams, crab, lobster, shrimp, scallops, octopus, and fresh fish, all prepared in various styles, including pasta, curries, and sandwiches. Each dish focuses on bold flavors that bring a unique twist to classic dishes.

Some great beginnings include the shrimp cocktail and shrimp sliders. Unlike the typical chilled version, Humble’s shrimp cocktail is served warm, topped with lemon zest and chives, giving it a bright, citrusy note balanced by a touch of saltiness. The warmth of the dish brings out a flavor reminiscent of lobster, creating an unexpected take on the classic dish. The shrimp sliders are a decadent starter, served on buttery house-made sweet buns and finished with a zesty chili mayo, offering the perfect balance of sweet and spicy in every bite. For something light yet sophisticated, the tuna carpaccio features hand-pounded ahi tuna, thinly sliced and topped with crispy capers, microgreens, and a shallot vinaigrette, served alongside crisp bread, ideal for building the perfect bite.
From the steam kettles, the bouillabaisse, a nod to the traditional French fish soup, stands out on the menu. Served piping hot, it features mussels, clams, salmon, gulf prawns, octopus, and squid, all in a creamy saffron-tomato broth enriched with lemon zest, chili flakes for a subtle heat, and fresh parsley. Another standout entree is the lobster-and-shrimp roll featuring half of a fresh East Coast lobster tail alongside Argentine shrimp and gulf prawns, butter poached and tossed in a velvety hollandaise sauce. Served inside a fluffy, house-made croissant that could rival any Parisian bakery, this roll is topped with lemon zest and paired with a light, refreshing side salad.
The oyster selection rotates regularly, featuring boutique farms and exclusive, chef-curated variations. Every oyster is hand-selected by Chef Gomez to ensure that only the highest quality and freshest bites make it to your plate. Currently, the oysters are primarily sourced from the East Coast, offering a range of distinct flavor profiles, from sweet to briny, along with varying sizes, from petite to large. Each oyster “bite” is served deshelled and comes in one of four unique flavors: rosé, Michelada, cucumber, and dumpling. The rosé and cucumber bites are light and refreshing, while the Michelada and dumpling options offer more robust flavors. Every variation is crafted to complement the oyster, giving guests a chance to explore a range of tastes with every bite.
To complement the seafood, Humble Oysters & Bubbles has an extensive list of sparkling wines featuring Champagne, Crémant, Cava, Prosecco, Rosé, and other global bubbles at approachable prices.
