A new chef de cuisine, Jesus Figueroa, and general manager, Michael Elortegui, have joined Four Seasons Resort Scottsdale at Troon North’s signature dining destination, Talavera.
Talavera, a contemporary Spanish steakhouse at Four Seasons Resort Scottsdale at Troon North, has welcomed two new additions to their team, Chef de Cuisine Jesus Figueroa and general manager Michael Elortegui. The duo is eager to elevate the experience at the Spanish restaurant with new operations and offerings soon to come.
Figueroa is a culinary veteran who most recently worked as the executive chef at etta at Scottsdale Quarter, a concept by Michelin-starred chef, Danny Grant. The new chef de cuisine also played a part in the opening of Arizona Biltmore’s Renata’s Hearth and other acclaimed local restaurants like Cafe Monarch, Tarbell’s and Chicago-based, Michelin-rated Boka. Figueroa initially took on cooking after watching his mother fall in love with the craft. When he isn’t cooking, Figueroa enjoys spending time with his loved ones and traveling. He has spent most of his time exploring Spain, sampling local cuisine and wine.
Prior to joining Talavera, Elortegui was the senior restaurant manager at Bourbon Steak at Fairmont Scottsdale Princess. Before his time at Fairmont, Elortegui gained valuable experience in Hawaii at the Fairmont Orchid and in California, helping run various hotel and resort concepts. He even participated in professional global tennis tournaments in the United Kingdom and throughout Europe and now enjoys playing and teaching the sport in his spare time.
