With Pinyon, Hi Noon Hospitality is set to bring a taste of the Mediterranean coast to the heart of Scottsdale, offering a place to gather, savor, and connect. The new Mediterranean concept is slated to open in the fall of 2025.
Drawing inspiration from Turkey, Italy, France, Malta, Greece, Spain, and Morocco, Pinyon promises to transport diners on a culinary journey across the Mediterranean. The restaurant’s name itself pays homage to this region. During his travels, Adam Strecker, founder of Hi Noon’s, was captivated by the Mediterranean pine nut tree, an echo of the pinyon trees that are native to the Southwest.
The restaurant will offer a vibrant, alfresco dining experience with a patio perfect for sipping an Aperol spritz or other aperitivos. The menu will showcase signature coastal dishes prepared using time-honored techniques like open-flame grilling. Guests can look forward to house-made pita, crudos, handmade pasta, seasonal salads, and an ever-changing lineup of dips and spreads, all crafted to reflect the diverse heritage of more than 20 Mediterranean countries.
“At Pinyon, our goal is to provide more than just a meal,” says Adam Strecker, founder of Hi Noon, in a recent press release. “We aim to offer our guests an authentic Mediterranean experience—one that highlights the region’s rich culinary traditions while fostering a sense of community, one plate at a time.
The opening marks another milestone for Hi Noon Hospitality, the powerhouse behind beloved Arizona brands like Buck & Rider and Ingo’s Tasty Food. Over the past year alone, Hi Noon has served over 1 million guests, offering comprehensive expertise across menu development, operations, financial strategy, and restaurant design. The company also provides training and mentorship to help restaurants thrive. Buck & Rider currently operates three Arizona locations with plans for expansion into California, Texas, Tennessee, and Florida, while Ingo’s Tasty Food continues to grow across Phoenix and Scottsdale.
