Restaurant of the Week: Koibito Poke

Founded in 2018 by former Diamondbacks pitcher, Todd Stottlemyre, Koibito Poke offers a DIY-style dining experience where guests can create their own Hawaiian-style poke bowls with freshly prepared ingredients and authentic coastal flavors. 

A fast-casual concept, Koibito Poke focuses on serving healthy food that is not only fresh and delicious but aids your body’s immune system and overall health. The spot encourages its guests to love and take care of their bodies by fueling them with clean eats and healthy nutrients. This ideology is what inspired the poke bar’s name, Kobitito, meaning “love,” or the feeling of love between two new lovers. 

Its menu was inspired by the bright and bold flavors from Hawaiian and Japanese cuisine. Each protein– including a raw menu with fresh salmon, tuna, yellowtail, spicy tuna and Hawaiian tuna and a cooked protein lineup including shrimp, octopus, chicken and tofu–is prepared fresh and only with the highest quality ingredients daily. Its toppings, inspired by the two cultures, offer a wide variety of flavors from sweet pineapple to savory edamame. In addition, there are nine unique, house-made sauces to complete your bowl. We highly recommend the champagne butter sauce.

If you don’t feel like your poke bowl-building skills are up to par, try one of their chef-driven signature bowls, like the First-Timer Bowl, with your choice of base (white or brown rice, or mixed greens) with three scoops of Hawaiian tuna, house sauce, cucumber, edamame, green onion, pineapple, a sweet crab mix and sesame seeds. If you prefer your bowl with something on the cooked side of the menu, we recommend trying the chicken and shrimp bowl, with freshly marinated and cooked chicken, your choice of base, sriracha aioli, champagne butter, cucumber, edamame, red onion, Brussels sprouts, cilantro and crispy red onion. 

Aside from the delicious bowls, Koibito Poke offers a variety of soft mochi flavors at its mochi bar, and a drink menu including whites, reds, bubbles, and cold beers and ciders.
