Westside Concepts has opened its newest Phoenix restaurant, Copper & Sage, showcasing dishes with a Southern flair. Connected to Copper & Sage through an outdoor patio is Blue Stave, a traditional speakeasy that provides the ideal setting for post-dinner drinks.
Chef Evon Profitt, director of Culinary and Beverage Operations for Westside Concepts, has created a menu that combines unexpected flavors and textures at Copper & Sage. Each dish tells a unique story, creating a memorable dining experience in a warm and welcoming atmosphere adorned with exposed brick, leather seats and chandeliers.
The menu features Southern-inspired dishes, including timeless favorites such as fried green tomatoes, deviled eggs and blistered shishito peppers, all with an elevated twist. The deviled eggs, for instance, are far from traditional as they are infused with bourbon and topped with bacon jam, pecans and chives, providing a sweet yet savory dish to share. Additional starters include the savory Pickles and Pimento (featuring fried pickles with thick pimento cheese for dipping), black-eyed pea hummus and flavorful chicken wings. For entrees, the shrimp and grits provide a rich flavor profile topped with mushrooms and bacon served on cheesy grits. Another standout is the pork belly tacos, which are a unique take on a traditional taco. The tender pork belly is complemented by kimchi and sriracha aioli and served on a warm corn tortilla to form the perfect bite.
Signature cocktails at Copper & Sage include the C&S Julep and the Moro Zingiber. The C&S Julep is a refreshing, slightly sweet cocktail made with French gin, apricot, Liquid Alchemist Orgeat and lemon juice. The Moro Zingiber is a bright, sweet and citrusy cocktail featuring vodka, Lyre’s Aperitif Rosso, blood orange and ginger.
Adjacent to Copper & Sage, Blue Stave is a unique speakeasy for post-dinner drinks, providing a stylish ambiance complete with an illuminated marble bar and wood accents. Signature drinks include the Blind Tiger and The Ombibulous Amigo. The Blind Tiger is a rich, flavorful cocktail made with Woodinville Rye, Chinola Passion Fruit, Golden Falernum and aromatic bitters that provide the perfect balance of sweetness and spiciness. The Ombibulous Amigo has an intriguing combination of ingredients, including Vago Elote Mezcal, Abasolo Mexican Whiskey, grapefruit liquor, Liquid Alchemist Orgeat, lime juice and cinnamon, creating a smoky yet sweet citrus flavor.
Copper & Sage is open for lunch Tuesday to Friday, 11 a.m. to 2 p.m.; for dinner Tuesday to Thursday, 4 to 9 p.m.; and Friday and Saturday, 4 to 10 p.m. Brunch is served Saturday and Sunday, 10 a.m. to 2 p.m.
