Rancho de los Caballeros Unveils New Restaurant

Rancho de los Caballeros, a renowned ranch-style resort in Wickenburg, has announced the launch of its elevated ranch dining concept, 19. The resort is also introducing a series of renovations and fresh programming, making it a year-round destination for guests.

Under the guidance of Executive Chef Jacob Ellis, 19 promises a unique culinary experience featuring modern global cuisine rooted in locally sourced ingredients. Now open, 19 is the resort’s second on-site restaurant, complementing the historic main dining room. Named after the last stop following a round of 18 holes on the championship-caliber golf course, 19 provides an inviting space for friends and family to gather, relax and enjoy a meal together.

“Rancho de los Caballeros has been a magical destination for families and friends to gather and reconnect with one another for more than 75 years,” says Sandy Cutler, owner of Rancho de los Caballeros, in a press release. “We are excited to create an elevated ranch experience for guests through these renovations and new offerings. We continue to strive to preserve the legacy of the ranch and are honored to welcome guests from all over the world to experience Rancho de los Caballeros’ horses, hats and hospitality.”

Chef Ellis and his team aim to deliver an authentic and refined culinary program showcasing fresh, focused cuisine at every meal. 19’s seasonal dishes include heirloom potato with rye, piquillo pearls, burnt onion, creme fraiche, micro celery and dill; prime filet mignon with pommes puree, asparagus, cabernet demi and watercress; and Hokkaido scallop cooked in a buttermilk puree with dill, pink peppercorn, shaved Fresno chili and fried ginger. The 3,000-bottle wine cellar complements the approachable, upscale menu. 19 will be open for dinner on Thursday to Saturday, from 5 to 9 p.m., as well as brunch on Sundays from 10 a.m. to 2 p.m.

Rancho de los Caballeros has also expanded its offering with the Wine Up Wednesday series, featuring multi-course dinners paired with selections from premier wineries, such as Nicolas-Jay Wines. Additionally, the resort introduced Celebrity Chef Ranch Weekends, a monthly culinary series running through April 2024. These immersive experiences bring renowned chefs to Wickenburg, collaborating with Chef Ellis to create three-course dinner events for $125 per person.
