Z’Tejas New Summer Menu

Beginning July 5 until August 21, Z’Tejas Southwestern Grill will once again be offering their custom summer menu. This new menu will feature tasty new dishes and specialty drinks made with Maestro Dobel Tequila.

Ahi Ceviche Tacos

Ahi Ceviche Tacos
Chipotle marinated ahi tuna with mango, jicama and watercress, topped with toasted sesame seeds in soft corn shells, served with avocado spring salsa and an avocado wasabi aoli.

Spicy and Sweet Shrimp Salad
Citrus marinated shrimp mixed with watercress, arugula, mixed greens, grapefruit, watermelon and cucumber tossed in a sriracha dressing, topped with crumbled bleu cheese and cornbread crouton sticks.

Grilled Redfish with White Peach Salsa
Grilled redfish lightly brushed with a pomegranate chile glaze, topped with grilled white peach salsa, atop a bed of sautéed summer vegetables.

Pomegranate Chile Chicken and Heirloom Tomato Salad
Grilled chicken with a pomegranate chile sauce, atop arugula and watercress leaves, served with slices of heirloom tomatoes, topped with slivered onions and Oaxaca cheese.

15 Spice Chicken
Half chicken rubbed with 15 spices and grilled over an open flame, served atop a bed of summer vegetables with herb reduction.

Prickly Pear Chipotle Ribs
St. Louis style pork ribs smoked and slow roasted, smothered with prickly pear chipotle BBQ sauce, topped with toasted sesame seeds, served with sweet potatoes fries and borracho beans.

Specialty cocktails include:

Peach Fever
Maestro Dobel Tequila, fresh peach purée, splash of orange juice, housemade jala¬peño syrup and a squeeze of lime.

Dobel Diamond Smash
Maestro Dobel Tequila, Herradura agave nectar and muddled lemon and mint leaves.
