McCormick Ranch in Scottsdale has welcomed its newest restaurant, Amelia’s by EAT. This neighborhood eatery puts a unique twist on charcuterie boards with a build-your-own board concept, in addition to chef-curated boards.

Amelia’s by EAT was created by Chef Stacey Weber as an extension of her catering company, Eat by Stacey Weber. The cozy restaurant provides an ideal setting for date nights, featuring comfortable outdoor seating and large tables perfect for gatherings like a girl’s night out. A welcoming rectangular-shaped bar is the centerpiece of the restaurant, complemented by a stunning floor-to-ceiling wine wall and an open-kitchen concept. A convenient grab-and-go section sits at the front of the restaurant, featuring a selection of ready-to-eat meals, drinks, pastries and grocery items for enjoying at home or gifting to others.

Amelia’s by EAT takes pride in thoughtfully sourcing ingredients from businesses across Arizona. Some purveyors include Noble Bread, Steadfast Farms, Los Milics Vineyards and many more local farmers and artisan growers. The restaurant welcomes guests for breakfast, lunch, happy hour and dinner, offering a range of dishes available throughout the day as well as exclusive selections in the evening.

Guests can enjoy a unique build-your-own board experience exclusive to the dinner menu. This concept offers options not typically found on a traditional charcuterie board and presents three categories: Main, Garden and Roots & Grains. Under the Main category, diners can select from options such as red wine-braised beef short rib, a tender grass-fed tri-tip slider served on fluffy bread with arugula and zesty horseradish and flavorful house-made vegan falafel. The Garden choices include tangerine-chili olives, the perfect blend of sweet and spicy, along with lemon-garlic broccoli and quinoa tabbouleh. In the Roots & Grains category, guests can indulge in roasted sweet potatoes, freshly baked focaccia and savory steak fries.

If building your own board seems intimidating, Amelia’s by EAT provides an alternative with chef-curated boards, expertly balancing all the categories on the menu. Beyond the boards, the menu features nosh bites (make sure to try the soft pretzel bites served with creamy horseradish mustard), sandwiches, salads, toasts and decadent desserts.
