Restaurant of the Week: Ember

Located at the new We-Ko-Pa Casino Resort in Fort McDowell, Ember is a destination dining experience with specialty prime meats and seafood sourced from around the world. Each dish is prepared over a wood-fired grill and is created by legendary chef De Cuisine Richard E. Pelz. 

A live piano plays energetically into the restaurant’s atmosphere, creating a lively environment for each guest. The views of the culinary staff hard at work are impossible to miss, and outdoor dining is available seasonally, featuring a patio space by a cozy fire. 


Ember’s menu is driven by chef De Cuisine Richard E. Pelz, a critically acclaimed culinary master. We recommend starting your experience with the Ujih hot stone, an Asian-inspired delicacy prepared right at your table with a 900-degree stone. Sample from the wild-caught seafood tower showcasing oysters, jumbo shrimp, stone crab, grilled Spanish octopus and fresh tuna poke. Dine on signature dishes like the Snake River Farms wagyu striploin, served with brandied lobster risotto, grilled asparagus and Ujih steak sauce. Finish off your meal with the citrus-infused cognac-toasted brioche pudding prepared tableside and infused with flames.


The fare is complemented by a refreshing cocktail menu, specialty whiskeys, and an extensive wine and spirit list. The wine menu offers 517 wines by the bottle, and 26 by the glass- a collection from over 17 countries. Sommelier Dennis Payne and his team are readily available for recommendations; Payne has more than 31 years of experience as a sommelier and can help you find the perfect bottle.
