Flourish restaurant, located at CopperWynd Resort & Club in Scottsdale, unveiled a fresh new menu last month that Chef Richie Sica created using locally sourced ingredients.
The views alone are reason enough to visit Flourish, overlooking Fountain Hills with views of the Four Peaks. Thankfully the food and drinks match the breathtaking views.
One long-time favorite dish which was kept on the menu is the Flourish Brussel Sprouts with worcestershire gastrique, cotija cheese, truffle oil. We could see why this dish was not removed from the new menu, it is a must-try starter! A new appetizer you can try is the Hamachi Poke, made with wakame salad, edamame, cucumber, Fresno chili green and red onion, brown rice, avocado, poke sauce, toasted sesame seeds, rice shard and cilantro.
For salads, we recommend the new Flourish Salad, made with mesclun greens, red apple slices, red grape halves, mustard vinaigrette, bell peppers, candied walnuts, pomegranate and sunflower seeds and cucumber coins. This would also make a great main dish by adding chicken or salmon.
Some highlights of new main dishes include the Parmesan Herb Crusted Halibut, Shrimp Smoked Butter Scampi Linguine and a new vegetarian dish, Cauliflower Steak with baby peppers, chimichuri, and manchego. The Cauliflower Steak is rich with the colors and flavors of turmeric, ginger, cumin and more.
If you can save room for dessert, we recommend the Banana Butter Cake or S’mores Tableside, served with a variety of marshmallow flavors handcrafted in Arizona.
