Hyatt Regency Scottsdale Resort & Spa at Gainey Ranch is set to elevate its dining experience through an exclusive partnership with celebrity chef Richard Blais as a part of the resort’s multimillion-dollar renovation. The project will feature renovated guest rooms, revitalized dining venues, expanded pool facilities and enhanced meeting and event spaces.

Richard Blais, a successful chef, restaurateur, James Beard-nominated cookbook author and television personality, will introduce six distinct dining concepts to the Scottsdale resort. Among these, his signature concept pays homage to Italian-American cuisine, showcasing handmade pasta and charcoal-grilled steaks, seafood and chops. This venue will offer refined indoor seating seamlessly connected to the resort’s Desert Garden outdoor entertainment space, accompanied by an elegant wine bar showcasing premier Italian wines. The second restaurant concept will unveil a dynamic fusion of Japanese sushi, Spanish tapas and Southwest flavors. Guests can expect the focal point of the restaurant to be an expansive made-to-order sushi and tapas bar.

“We are thrilled to announce a partnership with celebrity chef Richard Blais to debut elevated dining and bar experiences at our beautiful Sonoran Desert resort,” says Lance Marrin, general manager of Hyatt Regency Scottsdale Resort & Spa, in a recent press release. “The new and exciting concepts will provide a wide variety of global and local flavors that our guests and local residents will love. All of our restaurant and bar venues are expected to debut this fall as we finalize our extensive renovation project.”

Blais’s creative vision extends to a Southwest-style grill, celebrating the region’s best produce, meats and seafood. Operating as a three-meal restaurant, it will serve breakfast, lunch and dinner, accompanied by an adjoining lobby bar. Guests can also relish in two reimagined poolside dining experiences from Chef Blais. H2Oasis, already open to guests, features tacos inspired by global flavors from the South Pacific, Polynesia, Hawaii and the Caribbean, along with refreshing frozen cocktails. The other family-friendly poolside restaurant will offer gourmet burgers, crispy chicken tenders, fries and more.
